Around our house we call it "Rachael Rayin'". It's when you invent a new recipe and use the family as lab rats to test it out on.
This Tomato Beet Wild Rice Soup is just one of those adventures. Before you judge me, hear me out. It was not only darn good it is probably one of the healthiest things I've ever constructed.
I started by using fresh canned tomato juice and beets that were grown and canned by my mom & dad on their Iowa farm. Then I added a bunch of other good stuff that I thought would compliment these great flavors thus creating a fine soup.
As it came together I realized this dish might also save lives. Maybe not like the Jaws-of-Life, but in a lessor more subtle way. Check out all of the health benefits packed into this soup.
-Organic Tomato Juice: Good source of vitamins A & C
-Organic Beets: Loaded with Potassium, magnesium, fiber, phosphorus, iron; vitamins A, B, C, beta-carotene, beta-cyanine & folic acid
-Fresh Jalapeno: Vitamin K, Vitamin C, Antioxidants, Capsaicin
-Fresh Onion: Vitamin B1, B6, C, Manganese, Copper, Potassium, folate, & Biotin
-Fresh Celery: Reduces inflammation, Regulates Alkaline, Aids Digestion, helps reduce bad cholesterol, helps lower blood pressure
-Organic Wild Rice: Vitamins A, C, E, Protein, Antioxidants, Phosphorus, Folate, Zinc
-Frozen Chicken Breast: Vitamin B6, Protein, Phosphorus

If you'd like to give this dish a shot, here is how I put it together:
-1 Jar or Can Tomato Juice
-1 Jar or Can Beets
-1 Fresh Jalapeno
-1 Fresh Red Onion
-3 Stocks Celery
-1 Cup Wild Rice
-2 Ea. Chicken Breast
-1 Fresh Sprig Rosemary
-2 Ea. Basil Leaf
-1 Packet Onion Soup Mix
-2 TBSP Brown Sugar
-Salt & Pepper
Bring Tomato Juice, beets with juice, diced Jalapeno, diced Red Onion, Diced Celery, & Onion Soup Mix to a low boil for about 30 mins. While contents are simmering, brown the diced chicken breast in Olive oil. After the veggies had softened I used an emersion blender to liquify the contents. Then add the Wild rice, Chicken Breast, Rosemary, Basil Leaf, Brown Sugar, Salt, & Pepper to taste. Simmer for about 1 hour.
