I love this time of year when you can make some of those great fall comfort recipes.  My dad always puts in a monster garden in northeastern Iowa.  And this year he had more of his giant Hubbard squashes.  (Is a group of squash called 'Squashes' or 'Squish'?)

I put together this darn good recipe I call 'Presbyterian Wild Rice Squash' Hotdish Recipe.  It's not officially sanctioned by the Presbyterian church, but I am...so I took the liberty.

If you want to give it a shot, here's all ya have to do.  Simmer all the ingredients in a big pot or, like I used, a pressure cooker, heck you could even crock pot this bad boy.

Ingredients for 'Presbyterian Wild Rice Squash Hotdish Recipe':

-Cubed Squash of your choice, I used a Hubbard.

-1 Diced Fresh Onion

-4 Stalks Diced Celery

-1 Diced Green Pepper

-1 Cup Wild Rice

-1 Cup Brown Rice

-1 Sliced Andouille Sausage

-1 Quart Chicken Stock

-1 Quart Apple Juice

Season to liking.  Once the squash has dissolved into the broth and the rice has softened you are ready to dig in.
