I love this time of year when gardens come in fast and furious.  My dad has always planted a large and amazing garden.

Dad has always been a tremendous gardener.  His plots are large and prolific.  And lucky for me he is very generous with the garden's bounty.

Recently I visited my mom & dad's house in rural Northeastern Iowa and they loaded me up with all sorts of tomatoes, onions, potatoes, beans, and 4 kinds of peppers.

I am always looking for new ways to preserve veggies.  I don't care for canning so I am limited to drying and freezing.

This year I diced and mixed up 4 kinds of peppers: Banana, Jalapeno, Bell, & Chili.  I put the mixed up peppers in a large gallon bag, flatten the bag out in the freezer, and then just break of a chunk when I need some.

On a snowy winter day this mixture adds a delicious taste of summer hotness in soups, eggs, casseroles, and other dishes.

Now I have a bunch of tomatoes to put up for winter.  Keeping in mind I don't can, do you have any tips as to what I can do with them?
